Good King Henry AKA: Early Spinach, Poor-man’s Asparagus, Perennial Goosefoot, Lincolnshire Spinach, Markery) Perennial spinach-like greens from Europe, closely related to lamb quarters, quinoa, and epazote, and less sweet than spinach. A traditional vegetable of the cottage garden, the leaves, and young shoots are picked in the spring and steamed as a nutritious and healthful potherb. Dark green, arrow-shaped leaves are eaten as a pot-herb, and the first shoots of the spring are eaten when pencil-thin, similarly to asparagus. Also known as Lincolnshire Spinach and Fat Hen.
