The Pasilla Bajio Hot Pepper is about 4-8" inches long. The name in Spanish means little raisin. It has a spicy, smoky flavor. It will go from dark green to brown, which is the best time to pick them. They are often used to make Mexican mole sauce. It has a smokey, rich taste and can be dried. Mildly hot, a slightly sweet, slender 8 to 14-inch pepper turning dark green to red and finally to brown. The unique rich flavor is used in 'mol̩' and other Mexican dishes, often called Chilaca when green. It has some heat (1000-2000 Scovilles) but also a great taste. This pepper is dried and used in seasonings and dishes. Spicy foods are great for metabolism. Many people on diets consume spicy foods because they add flavor without adding calories. Spicy foods also encourage you to consume more water which aids in digestion. Matures in 70-80 from transplant.
