This leafy green Chinese vegetable has long green, slightly ribbed leaf stalks and soft oval green leaves. The leaves and stems are best suited to brief stir-frying or steaming to retain their mild flavor. Pak Choi can be used in salads or stir-fries, or as a baby leaf, or used in a variety of Oriental dishes as a cooked vegetable when semi-mature or as fully-grown heads. Seeds are sown in early spring and fall for the best results. Plants can be picked for eating, 45 days after sowing. Mildly flavored leaves and crispy petioles are used extensively in many Chinese dishes. In many regions of China, this vegetable is also dried and stored for later use in cooking.
