Padron is a small hot pepper famous in Spain where they eat it sauteed in olive oil with sea salt as a tapas appetizer. If the peppers are harvested at 1 to 1 1/2 inches long, most will be mild with about one in twenty hot. All of the peppers will become hot when they reach 2-3".
