Mizuna mustard is a Japanese mustard green with dandelion-like Jagged Edge green leaves with a mild sweet earthly flavor. Mizuna grows fast and makes an excellent green salad. It can be harvested a few outside leaves at a time or the whole head near the ground. It is used for Sprouts and can also be used in stir-fry and soups—30 days (mature) or ten days (baby greens).
