

Big Jim Legacy Chile Pepper is an all-around winner when it comes to green chile. It has an incredible New Mexican chile flavor, thick flesh, and mild to medium heat. A favorite for chile rellenos. This variety offered here is Medium hot and perfect for roasting. Authentic green chile flavor and medium heat! This heirloom variety has been grown in the Hatch Valley of Southwest New Mexico for over a century. Hatch describes several different green chile varieties ranging from mild to extra hot. These Chiles are 8" to 10" long on productive 30" plants. Easy to grow and can be started indoors for an earlier harvest or directly sown into warm moist soil and kept wet until germination. Start seeds indoors 8 weeks before warm nightly temperatures. Place the seeds in sterile media and cover 1/4" deep. Provide 85°F bottom heat, bright light, and keep moist at all times. Seeds will germinate in 7 - 21 days. Transplant seedlings into pots and grow until there are 6 true leaves on the plant. Plant them directly into rich soil, 30" apart, or into large 5-gallon containers. Pinch off the first couple of blooms on seedlings to encourage more blooms and chiles later. Harvest chiles when they are green. The chiles will turn red at full maturity if left on the plant for a couple more weeks.
