

Florence Fennel, Foeniculum vulgare, a native of Italy, is a perennial vegetable plant in most zones that provides one vegetable, an herb, and two spices. This strain is the vegetable fennel raised for the overlapping thickened leaf stalks, which form a bulb at the plant base. Fennel is a culinary herb that can be used as an herb or eaten as a vegetable. Fennel is used to flavor soups, sauces, and fish dishes. Use bulb raw in salads or steamed, stir-fried, braised, or baked. Use the fern-like tops as a fresh or dried herb to add a licorice-like flavor to foods or tea. Height: 36 inches. The plant grows only 2-3 ft tall, making it an ideal candidate for smaller gardens.
Fennel does not transplant well and is best sown direct as soon as the soil is warm enough. Soaking the seeds for a day or two before planting ensures better germination. Pick a well-drained, sunny location and plant seeds ½" deep, 8-12" apart. Keep well-watered until established.
