Chia (Salvia Hispanica) Medicinal Seeds
Chia is a species in the mint family with purple or white flowers. Seeds are produced in numerous clusters in a spike at the end of each stem. The seeds are also an excellent source of omega-3 fatty acids and antioxidants. Chia seeds may be eaten raw or prepared in a number of dishes. Raw, they are an excellent source of dietary fiber and Omega-3 fatty acids. Chia seeds were a staple of the ancient Aztecs in pre-Columbian times diet. Chia seeds may be ground into Pinole, a meal that can be used for porridge or baked goods. They may also be soaked in fruit juice or water to make a dish known as Chia Fresca in Mexico. Chia seeds have been coined a "superfood" for good reason. Dried chia seeds contain a rich source of the B vitamins, thiamin and niacin, and a moderate source of riboflavin and folate. Also has several minerals including calcium, iron, magnesium, manganese, phosphorus, and zinc.
